Red and White Onion Relish
- 1 1/2 c. Chopped red onion
- 1 1/2 c. Chopped white onion
- 1 c. distilled white vinegar
- 1/2 c. sugar
- 1/2 tsp. tricolored peppercorns
- 1/2 tsp. cumin seeds
- Combine all ingredients in a small saucepan over medium heat and bring to a boil.
- Reduce heat to medium low and cook the onions for 15 minutes.
- Cool completely.
- Place the relish in a covered container and let marinate, in the refrigerator, for 1 week.
- Store refrigerated in a covered container for up to 3 weeks.
