Chili Chip Casserole
- 1 lb. ground beef
- 1 c. chopped onion (1 medium)
- 1 pkg. chili seasoning mix
- 1 (6 oz.) can tomato paste
- 3/4 c. water
- 1 (6 oz.) bag corn chips
- 1 (1 lb.) can pinto beans
- 2 (2 1/4 oz. each) cans sliced ripe olives
- 2 c. grated Cheddar cheese
- Brown ground beef until crumbly.
- Add onion, chili seasoning mix, tomato paste and water.
- Combine thoroughly.
- Simmer about 10 minutes.
- Place 1/2 bag (about 2 cups) corn chips in bottom of 2-quart casserole.
- Spoon 1/2 chili meat mixture over corn chips. Place 1/2 can pinto beans over meat mixture, then place 1 can olives over beans.
- Sprinkle with 1 cup grated cheese.
- Repeat the meat, pinto beans and olive layers.
- Arrange remaining corn chips over top and sprinkle with remaining cup grated cheese. Cover and bake in a 350u0b0 oven for 30 minutes.
- Uncover and bake an additional 15 minutes.
- Makes 6 to 8 servings.
