Hearty Caribbean Beef Stew

  1. Cook and stir bacon in Dutch oven or a large heavy saucepan until crisp.
  2. Remove bacon from pan with slotted spoon; drain on paper towels.
  3. Discard all but 1 Tbsp.
  4. drippings from pan.
  5. Add dressing to drippings in pan; heat on medium heat.
  6. Coat meat with flour; add to pan.
  7. Cook on medium heat until evenly browned, stirring occasionally.
  8. Add broth, tomatoes and water; bring to boil, stirring occasionally.
  9. Simmer on medium-low heat 45 min.
  10. Add yuca and carrots; cover.
  11. Cook 45 min.
  12. or until meat and yuca are tender.
  13. Stir in cilantro and cooked bacon just before serving.
