Fresh Mint Pasta

  1. Heat oil in a heavy pan over medium-low heat.
  2. Add onions and cook slowly to caramelize.
  3. Stir occasionally.
  4. Cook until onions are soft and dark gold, 25-30 minutes.
  5. Meanwhile, boil 16 cups of water for the pasta.
  6. Cook pasta.
  7. Put chicken stock and onions in a large bowl.
  8. Add hot drained pasta to to onion mixture.
  9. Add cheese and mint.
  10. Toss well.
  11. Garnish with pine nuts.
