Stuffed Tomatoes

  1. Cut the top off Tomatoes
  2. Cut a little off the bottom of the tomatoes (this will allow the tomatoe to sit on a flat surface)
  3. Hollow out all of the insides of the tomatoes with a tbls
  4. Season insides of tomatoes with salt and pepper
  5. Refrigerate to chill standing upright
  6. Dice chicken in small pieces
  7. Chop boiled eggs into the chicken
  8. Add relish
  9. Dice celeryand add to chicken mixture
  10. Add mayonaise to desired consistency
  11. Add lemon juice
  12. Add salt and pepper to taste
  13. Stir chicken mixture well
  14. Ready to stuff tomatoes
  15. Take two pieces of lettuce and carefully stuff inside the tomatoes leaving some lettuce hanging outside / around tomatoes
  16. Sfuff chicken mixture inside th lettuce filling to the top
  17. Sprinkle lightly with paprika
  18. Ready to serve if stuffed fomatoes are not going to be served at that time cover with clear plastic and keep refdigerated.
