Stuffed Tomatoes
- 4 large tomatoes
- 2 Chicken Breasts
- 2 Celery Stalks
- 2 Hard boiled eggs
- 3 tbsp Sweet Relish
- 1 Mayonaise
- 4 large Whole pieces of lettuce
- 1 dash Salt and Pepper
- 2 dash Paprika
- 1 tbsp Freshly squeezed lemon juice
- Cut the top off Tomatoes
- Cut a little off the bottom of the tomatoes (this will allow the tomatoe to sit on a flat surface)
- Hollow out all of the insides of the tomatoes with a tbls
- Season insides of tomatoes with salt and pepper
- Refrigerate to chill standing upright
- Dice chicken in small pieces
- Chop boiled eggs into the chicken
- Add relish
- Dice celeryand add to chicken mixture
- Add mayonaise to desired consistency
- Add lemon juice
- Add salt and pepper to taste
- Stir chicken mixture well
- Ready to stuff tomatoes
- Take two pieces of lettuce and carefully stuff inside the tomatoes leaving some lettuce hanging outside / around tomatoes
- Sfuff chicken mixture inside th lettuce filling to the top
- Sprinkle lightly with paprika
- Ready to serve if stuffed fomatoes are not going to be served at that time cover with clear plastic and keep refdigerated.
