Superfoods Spicy Tofu Salad

  1. Combine vinegar, oil, soy sauce, garlic, ginger and red pepper.
  2. Blend well.
  3. Place tofu, mushrooms and bell pepper in a bowl.
  4. Add the marinade you made in Step 1.
  5. Stir gently to coat veges well.
  6. Chill at least 1 hour, but use within 3 days.
  7. To serve, placed lettuce leaves on chilled serving plates.
  8. Top them evenly with salad.
  9. Garnish with fresh cilantro.
