Cool Caribbean Lime Cheesecake

  1. Place cream cheese, sugar, lime zest, juice and vanilla in large bowl of electric mixer (or in medium bowl for trial recipe) fitted with paddle attachment.
  2. Beat until well blended.
  3. Add eggs, one at a time, mixing on low speed after each addition just until blended.
  4. Pour about 2-1/2 cups batter into each crust.
  5. Bake in 350F-standard oven 40 min.
  6. or until centers are almost set.
  7. Cool.
  8. Refrigerate 3 hours or until chilled.
