Wheat-Free Applesauce Cake
- 2 cups rolled oats ground
- 23 cup sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup vegetable shortening soft
- 2 medium eggs
- 1 teaspoon vanilla extract
- 1 cup applesauce sweetened
- 1 cup raisins, seedless optional
- Combine ground oats, sugar, salt, soda, and spices in mixing bowl.
- Add shortening, eggs and vanilla.
- Beat until smooth, about 2 mins.
- Stir in applesauce and raisins (optional).
- Pour batter into greased 8 inch square baking pan.
- Bake in preheated moderate oven 350F (180C)., 35 to 40 mins.
- Cool, cover pan and store one day before serving.
