Quicker Potato Gratin with Bacon
- 1-1/2 lb. (675 g) Yukon gold potatoes (about 5), very thinly sliced
- 1/2 cup water
- 1 Tbsp. butter
- 1/4 cup finely chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 Tbsp. flour
- 3/4 cup milk
- 1-1/2 cups Cracker Barrel Shredded 4 Cheese Italiano Cheese
- 4 slices bacon, cooked, crumbled
- Heat oven to 375 degrees F.
- Microwave potatoes and water in covered microwaveable dish on HIGH 6 to 8 min.
- or just until potatoes are tender.
- Meanwhile, melt butter in medium saucepan on medium heat.
- Add onions; cook and stir 4 min.
- or until tender.
- Stir in flour; cook and stir 1 min.
- Gradually whisk in milk.
- Bring to boil, stirring constantly.
- Simmer on medium-low heat 3 to 5 min.
- or until thickened, stirring constantly.
- Add cheese; cook and stir 2 to 3 min.
- or until melted.
- Place half of the potatoes in bottom of 1.5-L casserole dish sprayed with cooking spray; cover with half the cheese sauce.
- Repeat layers; cover.
- Bake 20 min.
- or until heated through.
- Let stand 5 min.
- Sprinkle with bacon.
