Herbed Gravy

  1. In a medium saucepan, heat the oil over medium-high heat.
  2. Add the onions and cook, stirring frequently, until softened, about 6 minutes.
  3. Add the garlic and cook until aromatic, about 30 seconds.
  4. Stir in the flour until incorporated.
  5. Add the stock and bring the mixture to a boil, whisking constantly.
  6. Add the oregano and thyme.
  7. Reduce the heat to a simmer and cook for 10 minutes until thickened.
  8. Stir in the strained pan juices or apple juice and bring to a boil.
  9. Boil for 2 minutes.
  10. Whisk in the butter, salt and pepper until smooth.
  11. Pour into a pitcher and serve.
