Strawberry bread
- 1 lb fresh strawberries, mashed
- 1 3/4 cup flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 tsp salt
- 5 1/2 tbsp butter, softened
- 1 cup sugar
- 2 eggs
- Preheat oven go 350.
- Spray loaf pan with nonstick cooking spray.
- Place mashed strawberries with their juice in a medium saucepan.
- Bring to a boil over medium heat.
- Cook and stir 1 minute then remove from heat.
- They will produce a lot of moisture.
- Do not drain.
- In medium bowl, whisk together flour, baking soda, cinnamon, baking powder, and salt.
- In large bowl, cream together butter and sugar.
- Add eggs, one at a time.
- Add half of flour mixture, then half of strawberries.
- Add remaining flour mixture, then remaining strawberries.
- Batter will be very wet.
- Bake 60-70 minutes or until toothpick inserted near center comes out clean and bread is pulling away from the sides of the pan.
- Cool on wire rack.
