Flamed Roast Filet of Beef

  1. Rub the filet well with oil and freshly ground pepper.
  2. Place on a rack in a roasting pan and roast in a 350F.
  3. oven for 45-50 minutes, or until the meat thermometer registers 120F.-125F.
  4. (for rare).
  5. Brush with oil occasionally, if necessary.
  6. Salt the roast and let it rest for 10 minutes.
  7. Remove to a hot platter and blaze with the heated cognac.
  8. Sprinkle lavishly with chopped parsley.
