Cheesy BBQ Skillet

  1. Cook chicken in large skillet sprayed with no stick cooking spray on medium-high heat 4 to 5 minutes or until cooked through.
  2. Stir in rice, barbecue sauce and water.
  3. Bring to boil.
  4. Reduce heat to low.
  5. Cover and simmer 5 minutes or until liquid is absorbed.
  6. Stir in beans and 1 cup of the cheese.
  7. Sprinkle with remaining 1/2 cup of the cheese; cover.
  8. Cook on low heat until cheese is melted.
  9. Fill soft tortillas with rice mixture, if desired.
