Cheesy BBQ Skillet
- 1 lb. boneless skinless chicken breast halves, cut into strips
- 2 cups MINUTE White Rice, uncooked
- 1-1/2 cups KRAFT Original Barbecue Sauce
- 1 cup water
- 1 cup canned black beans, drained
- 1-1/2 cups (6 oz.) KRAFT Shredded Cheddar Cheese, divided
- Cook chicken in large skillet sprayed with no stick cooking spray on medium-high heat 4 to 5 minutes or until cooked through.
- Stir in rice, barbecue sauce and water.
- Bring to boil.
- Reduce heat to low.
- Cover and simmer 5 minutes or until liquid is absorbed.
- Stir in beans and 1 cup of the cheese.
- Sprinkle with remaining 1/2 cup of the cheese; cover.
- Cook on low heat until cheese is melted.
- Fill soft tortillas with rice mixture, if desired.
