Bongo's Ropa Vieja

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onion and peppers and saute until translucent.
  3. Add steak, tomato, bay leaf, cumin, garlic, and oregano.
  4. Stir to combine and cook for 25 minutes.
  5. Serve with white rice, black beans, and sweet fried plantains.
