Veggie Taco Melts

  1. Cook and stir peppers and carrots in oil 5 minutes on medium heat.
  2. Stir in corn and salsa; simmer 5 minutes.
  3. Spoon about 1/4 cup vegetable mixture over bottom half of each tortilla.
  4. Sprinkle with cheese.
  5. Fold tortillas in half; press together slightly.
  6. Place on cookie sheet sprayed with no stick cooking spray.
  7. Bake at 425 Degrees F for 5 minutes or until cheese is melted.
  8. Serve with BREAKSTONE'S or KNUDSEN Sour Cream.
