Crockpot Corn Chowder
- 2 can evaporated milk
- 2 can creamed style corn
- 1 stick butter
- 1 small onion (or onion bits)
- 1 salt and pepper to taste
- 1 cooked bacon or real bacon bits
- 3/4 of a 5lb bag of potatoes
- 1/2 cup regular milk
- 1 can regular corn (or bag of frozen corn)
- Plug in large crockpot and put on high setting to start.
- In frying pan, cook bacon first,drain and chop up small...then cook chopped up onions and butter together.
- Add these three to crockpot first.
- (If you are using onion bits and real bacon bits skip the fry pan method and just put those in crockpot)
- Then, add 2 cans evaporated milk, 2 cans cream corn and 1 can of regular corn (or frozen corn)
- Peel potatoes and cut up into small pieces and add to crockpot.
- Do not cut too small as they may turn too soft by the end of cooking.
- Add in 1/2 cup of regular milk as needed.
- Salt an pepper to taste, I usually add 1 tsp each and then add more if needed later.
- Cook on High for about an hour and then turn to low for the rest of the day.
- Usually the potatoes are finished by 4 hours.
- Stir as needed.
- Enjoy ...makes about enough for 5 people or more.
