Perfect Potato Soup Recipe

  1. Combine first 10 ingredients in large Dutch oven.
  2. Bring to a boil.
  3. Cover - reduce heat.
  4. Simmer for 20 min.
  5. Fry bacon in large skillet.
  6. Reserve 3 Tbsp.
  7. grease in skillet.
  8. Crumble bacon and set aside.
  9. Add in flour to drippings in skillet.
  10. Stir till smooth.
  11. Cook 1 minute stirring constantly.
  12. Gradually add in lowfat milk.
  13. Cook over medium heat till thick and bubbly.
  14. Gradually stir gravy into potato mix.
  15. Simmer 15 min uncovered.
  16. Yields 2 qts.
