Crustless Cheddar Carrot Quiche Recipe
- 2 c. shredded carrots
- 1 c. skim lowfat milk
- 4 Large eggs
- 2 tbsp. minced onions
- 1/4 teaspoon salt
- 1/4 teaspoon ginger
- 1/4 teaspoon pepper
- 4 ounce. grated cheese, Cheddar
- Boil carrots in 1 inch water, cover and set aside.
- Combine lowfat milk, Large eggs, onions and seasonings till well blended.
- Stir in liquid removed carrots and cheese.
- Spray pan with Pam and pour mix into pan.
- Bake at 350 degrees for 30-40 min.
- Serves 4.
