Fiesta Skillet Dinner
- 1 pound lean ground beef
- 1 cup uncooked instant rice
- 1/4 cup water
- 2 (14 1/2-ounce) cans chunky tomatoes with pepper and onions*
- 1/2 teaspoon salt
- 5 (3/4-ounce) slices Land O Lakes Deli Provolone Cheese, quartered
- 1 cup tortilla chips
- Cook ground beef in 10-inch skillet over medium-high heat, stirring occasionally, 5-8 minutes or until browned.
- Drain off fat.
- Stir in rice, water, tomatoes and salt.
- Continue cooking 5-6 minutes or until mixture comes to a boil.
- Reduce heat to low.
- Cover; cook, stirring occasionally, 5-6 minutes or until rice is tender.
- Stir in cheese; sprinkle with tortilla chips.
- *Substitute 2 (14 1/2-ounce) cans any variety chunky tomatoes with seasonings.
