Award Winning New Potatoes And Beans Recipe
- 2 lrg heads of garlic
- 5 Tbsp. extra virgin olive oil (75-90 millilitres)
- 2 lb small, new red potatoes, halved (900 grams)
- 1 lb fresh green beans (450 grams)
- 1 x Spanish onion, sliced
- 1 x salt and pepper
- Cut off the tops of garlic heads to expose the ends of the cloves.
- Place in a baking dish.
- Drizzle with 1 Tbsp.
- of extra virgin olive oil over each head.
- Bake in a preheated oven at 350 degrees Fahrenheit (180 degrees Celsius) for 30 to 40 min or possibly till garlic is soft.
- Drizzle occasionally with oil.
- Parboil beans and potatoes.
- Drizzle 1 tbsp.
- of extra virgin olive oil in a large baking dish.
- Add in potatoes, beans and onion.
- Scoop out garlic and spread on top of vegetables.
- Season to taste with salt and pepper.
- Drizzle another Tbsp.
- of extra virgin olive oil on top.
- Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 30 min, stirring occasionally.
