Cheesy Broccoli Baked Chicken
- 4 boneless chicken breasts
- 2 packages broccoli and cheese flavored rice mix
- 12 cup Chardonnay wine or 12 cup dry white wine
- 2 tablespoons butter
- 1 12 cups shredded cheddar cheese
- Prepare rice mix according to package directions.
- I use Lipton's brand.
- While rice is cooking, pan-saute chicken breasts in the butter until golden brown.
- Remove the chicken breasts from the skillet and add the chardonnay to the skillet.
- Stir and whisk up the bits from the bottom of the pan for approximately 2-3 minutes.
- Pour the rice mix into a large casserole dish and place the chicken breasts on top of the rice.
- Pour the wine mixture from the skillet over the chicken breasts.
- Top with the shredded cheese and bake at 350 degrees for 10 minutes or until cheese is golden brown.
