AMIEs BOLOGNESE RAGU
- 30 grams butter
- 1 large onion, finely diced
- 1 small carrot, finely diced
- 1 stick celery, finely diced
- 150 grams pork mince
- 160 grams veal mince
- 1/2 cup red wine
- 150 grams tomatoe passata
- 1 tsp sugar
- 1 salt and freshly ground pepper
- 1 cup water
- Heat the oil in a large saucepan over low medium heat.
- Add the onion and saute until golden brown.
- Add the carrot and celery and cook until softened.
- Add the pork and beef mince and cook for few minutes over medium heat.
- Stir constantly until browned.
- Pour in the wine and cook until reduced by half.
- Add the tomatoe passata and water.
- Mix well and let it boil.
- Season with salt, sugar and pepper.
- Stir to combine and gently simmer over low heat for 40 minutes, until thick.
- Taste and adjust the seasoning.
