AMIEs BOLOGNESE RAGU

  1. Heat the oil in a large saucepan over low medium heat.
  2. Add the onion and saute until golden brown.
  3. Add the carrot and celery and cook until softened.
  4. Add the pork and beef mince and cook for few minutes over medium heat.
  5. Stir constantly until browned.
  6. Pour in the wine and cook until reduced by half.
  7. Add the tomatoe passata and water.
  8. Mix well and let it boil.
  9. Season with salt, sugar and pepper.
  10. Stir to combine and gently simmer over low heat for 40 minutes, until thick.
  11. Taste and adjust the seasoning.
