Red Beans And Brown Rice

  1. Follow directions on package for soaking beans, either overnight or by quick-soak method.
  2. Pour off water.
  3. Cover beans with water, about 2 quarts.
  4. Add ham bone and chopped onion. Simmer gently, covered, about 2 hours.
  5. Add 1 teaspoon salt, 1/2 teaspoon pepper, chili powder and sliced pepperoni (if desired). Continue to simmer gently, about 1 1/2 hours.
  6. Follow directions on rice package.
  7. Serve beans over rice.
  8. Very good served with corn bread and a salad.
  9. Serves 6.
