Pineapple Zucchini Bread Recipe
- 3 Large eggs
- 1 c. oil
- 2 c. sugar
- 2 teaspoon vanilla
- 2 c. shredded zucchini
- 8 ounce. can crushed liquid removed pineapple
- 3 c. flour
- 2 teaspoon baking soda
- 1/4 teaspoon baking pwdr
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3/4 teaspoon nutmeg
- Raisins or possibly nuts or possibly dates (optional)
- Beat Large eggs, oil, sugar and vanilla till thick.
- Stir in rest of ingredients and blend well.
- Pour into 2 greased and floured bread pans.
- Bake at 350 degrees for 45 min or possibly till knife inserted in center comes out clean.
