Sig's Italian Cannellini Bean Soup with Curly Kale Or Savoy Cabbage
- 2 can 400 g chopped Italian tomatoes
- 250 grams curly kale or savoy cabbage
- 400 grams can Cannellini beans drained and rinsed.
- 2 shallots, peeled and finely sliced
- 2 clove smoked garlic, crushed
- 1 pinch each parsely,coriander,thyme, oregano, paprika,salt and pepper.
- 5 tbsp extra virgin olive oil
- Gently soften the shallots and garlic in the oil,add the tomatoes add one can of water.
- Season with salt and pepper ,bring to boil then reduce heat and simmer,add the herbs and paprika to taste.
- Shred the cabbage finely ,add to pan,simmer until cabbage is tender.
- Add the beans,warm through.Check and adjust seasoning.
- Serve with toasted Italian or other white bread.
- Drizzle a little olive oil over soup.
- Tastes even better the next day.Add a little cayenne pepper for extra heat and flavour
