Simple Roast Beef with Thick Onion Sauce

  1. Coat the meat with salt, pepper, garlic, and rosemary and let it sit at room temperature.
  2. Heat in a pan and add the meat.
  3. Cook each side at medium heat for about 2 minutes.
  4. Once each side has cooked, cover with a lid and cook at low heat for 6 minutes, turning over occasionally.
  5. Then wrap the meat in 2 sheets of aluminum foil and let sit for about 30 minutes.
  6. Heat the remaining broth in the pan together with the garlic and the onions.
  7. Add sake, soy sauce, and mirin and bring to a simmer.
  8. Cut and arrange the meat and pour the sauce over to complete.
