Avocado-Lemon Dressing
- 4-1/2 cups grapeseed oil
- 3 each avocados, peeled, pitted and chopped Target 10 ea For $10.00 thru 02/06
- 2 cups water
- 1-1/2 cups fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 cup cilantro, chopped, divided
- 3/4 cup white balsamic vinegar
- 3/4 cup lemon zest, grated Safeway 4 ct For $5.00 thru 02/09
- 3/4 cup red onions, chopped
- 1/3 cup GREY POUPON Classic Dijon Mustard
- 2 Tbsp. gingerroot, peeled, grated
- 2 Tbsp. lime zest, grated Safeway 3 ct For $1.00 thru 02/09
- 2 Tbsp. fresh parsley, chopped
- to taste salt and pepper
- Place all ingredients except 1/4 cup of the cilantro (or 2 tsp.
- of the cilantro for trial recipe), the lime zest, parsley, salt and pepper in blender; cover.
- Blend well, stopping to scrape side of blender as needed.
- Pour into storage container.
- Stir in remaining cilantro, the lime zest and parsley; season with salt and pepper.
- Cover.
- Refrigerate at least 3 hours.
- Adjust seasoning if necessary.
- Serve over torn mixed salad greens.
