Avocado-Lemon Dressing

  1. Place all ingredients except 1/4 cup of the cilantro (or 2 tsp.
  2. of the cilantro for trial recipe), the lime zest, parsley, salt and pepper in blender; cover.
  3. Blend well, stopping to scrape side of blender as needed.
  4. Pour into storage container.
  5. Stir in remaining cilantro, the lime zest and parsley; season with salt and pepper.
  6. Cover.
  7. Refrigerate at least 3 hours.
  8. Adjust seasoning if necessary.
  9. Serve over torn mixed salad greens.
