Sig's stir fried crispy tofu
- 250 g/fried tofu pieces
- 30 ml/2 tblsp peanut oil
- 15 ml/1 tblsp thai green curry paste.
- 30 ml/2tbsp light soja sauce
- 2 kaffir lime leaves, rolled into cylinders and sliced
- 30 ml/2tbsp granulated sugar
- 150 ml/ 1/4 pint vegetable stock
- 250 g/ 9oz thin asparagus ,or slim carrot sticks or broccoli florets or a mixture. cut asparagus into 5cm/2in length
- 30 ml2tbsp roasted peanuts finely chopped
- preheat grill/broiler to medium heat.
- Place the tofu cubes in a grill pan and grill/broil for 2-3 minutes turn them over cook until crisp and golden brown all over.
- Do not burn them.
- heat oil in a wok or heavy frying pan.Add the green curry paste and cook over a medium heat.
- stirring constantly, for 1-2 minutes, until it gives of aroma.
- stir soy sauce, lime leaves,sugar and vegetable stock into wok and mix well.
- Bring to boil then reduce heat to just simmering.
- add asparagus or other veg and simmer gently for 5minutes.Meanwhile chop each piece of tofu into four and add to pan with peanuts.
- toss to coat all ingredients in the sauce, spoon into warmed dish and serve immediately.
