Lemon Mustard Broiled Flounder

  2. Place the butter in a small bowl and combine with the mustard, parsley, and lemon zest.
  3. Set aside.

  5. Arrange the oven or broiler rack 4 inches from the heat.
  6. Preheat the broiler.
  7. Line 2 baking sheets with aluminum foil.
  8. Oil the foil lightly.
  9. Evenly space 4 flounder fillets on each of the baking sheets.

  11. Spread about 1 1/2 teaspoons of the butter mixture atop each fish fillet.
  12. Broil for 4 to 5 minutes, or until the fish is lightly browned on top and just cooked through.
  13. Do not overcook.

  15. Serve immediately, garnished with a flourish of clover sprouts and a lemon quarter.
