Creamy Italian Rice

  1. SAUTE onion in butter until lightly browned.
  2. Add rice, cooking and stirring for 2 minutes over medium heat.
  3. Stir in mushrooms, broth and water.
  4. Continue to cook and stir until most of the liquid is absorbed.
  5. JUST before serving, stir in cheese and parsley.
  6. Serve immediately.
