Cabbage and Apple side Dish
- 1/2 head cabbage, halved lengthwise and thinly sliced
- 1 onion, chopped
- 3 apples, diced
- 1 tbsp grapeseed oil
- 200 ml water
- 1 tsp dried thyme
- 1 salt and pepper
- Bring a large pot of water to a boil, blanche the cabbage for 30-60 seconds, drain, rinse with cold water
- Heat oil and add onion, and cook until translucent.
- Add apples, cook for 1 minutes
- Add cabbage, water, salt, pepper, and thyme.
- Bring to a simmer and cook for 2-3 minutes.
- The cabbage and apples should still have some crunch.
