Woodears cooked with pork and sauerkraut
- 2 1/2 oz dried woodears, or your favorite mushrooms
- 5 lb boston butt pork roast
- 56 oz sauerkraut
- 1/4 cup rosemary oil
- 1/4 cup paprika
- 1/4 cup granulated garlic powder
- 1 tbsp fenugreek
- 1 tbsp celery salt
- 1/4 cup turmeric
- 1 quart chicken broth
- 2 tbsp sweetner I used stevia
- Preheat oven 400
- Mix the spices set aside.
- Slice the pork not all the way through, into 5-6 cuts.
- Cover with rosemary oil even in the cut areas.
- Put half the sauerkraut on bottom of roaster.
- Add spices to pork especially into sliced areas.
- Add roast to top of sauerkraut add chicken broth.
- Top with rest of sauerkraut.
- Stick woodears on sides in the broth.
- After one our add 2 tablespoonfuls of sweetner.
- Roast covered till done.
- Mine took 1 hour 45 minutes.
- Serve hope you enjoy!
