Fruity Banana Oatmeal Bread

  1. Preheat oven to 350 degrees.
  2. Spray a 9 x 5 loaf pan with cooking spray and set aside.
  3. Combine first 4 ingredients in a large bowl.
  4. Beat well and set aside.
  5. Combine all the fruits, oatmeal and milk in another bowl then set aside.
  6. Combine remaining dry ingredients stirring gently with a wisk.
  7. Mix together the two bowls containing the fruits/oatmeal and sugar/eggs.
  8. Slowly beat in the dry ingredients.
  9. Let stand for about 15 minutes.
  10. (This makes a huge difference in the loaf texture).
  11. Pour into the prepared laof pan.
  12. Top with the granola or chopped nuts.
  13. Bake about 1 hour 25 minutes or until knife inserted in the center comes out clean.
