Spinach Lasagne
- 1/2 lb. lasagne noodles, cooked
- 2 Tbsp. olive oil
- 2 lb. ground beef
- 1 medium onion, finely chopped
- 1 clove garlic, finely chopped
- 12 oz. tomato paste
- 1 tsp. parsley
- 2 eggs
- 2 c. water
- 1/2 tsp. pepper
- 3/4 c. Mozzarella cheese, grated
- 3/4 c. cottage cheese
- 1 pkg. Stouffer's spinach souffle, cooked per directions
- Parmesan cheese
- Brown beef in oil with onions, garlic and parsley.
- Add tomato paste, water, salt and pepper; cook 1 1/2 hours.
- Mix eggs, cottage cheese and spinach.
- Layer in a sprayed lasagne pan the noodles, sauce, Mozzarella-cottage cheese mixture, noodles, cottage cheese mixture, Mozzarella, sauce and Parmesan cheese.
