Blueberry Bread And Butter Pudding Recipe

  1. Preheat oven to 350 degrees.
  2. Remove crust from brioche loaf and cut into cubes.
  3. Toast cubes in the oven till golden.
  4. In a saucepan heat half and half, cream, salt, and vanilla bean just till boiling.
  5. Turn off heat to allow vanilla to infuse.
  6. Meanwhile, in a stainless steel bowl whisk together Large eggs and sugar.
  7. Slowly add in warm cream whisking constantly to make a custard.
  8. Strain the mix through a fine sieve and set aside.
  9. Toss brioche cubes with custard and let soak.
  10. Sprinkle berries into the bottom of 6 small baking dishes.
  11. Divide soaked bread amongst the dishes and top of with any remaining custard.
  12. Place dishes in a water bath and bake till set and golden.
  13. Sprinkle with powdered sugar.
  14. Yield: 6 servings
