Geoffs Manly Lo Mein
- 1 pound Spaghetti (linguini Or Angel Hair Pasta May Be Substituted)
- 1 package Beef Or Chicken Beef Broth Mix To Make 14 Oz. Of Broth (or A 14.5 Oz. Can Of Broth If Time Is Pressing)
- 1 dash Olive Oil
- 1 pound Stew Beef , Pork, Shrimp Or Chicken
- 2 cloves Garlic (can Substitute Garlic Pepper Or Garlic Powder If Desired)
- 2 dashes Soy Sauce, to taste
- 2 whole White Onions, Sliced Very Thin
- 1 whole Green Pepper, Sliced
- 1 whole Red Pepper, Sliced
- 1 stalk Celery, Chopped
- 1 pound Baby Carrots (I Use The Smallest Package Available)
- 4 ounces, weight Canned Bamboo Shoots
- In a large pot, bring water to boil.
- Add pasta and cook until al dente.
- Remove from heat and drain well, returning pasta to pot.
- Add the broth to the pasta, and simmer on a low heat, stirring often.
- (You want enough broth to keep the pasta from drying out, but not enough that you have a soup.)
- In a frying pan, heat the olive oil.
- Add the garlic and meat of choice, cooking until done.
- Add soy sauce, if desired.
- Add the onions, cooking until done.
- Add the peppers, carrots, celery, and bamboo shoots, cooking until al dente.
- Add the meat and vegetables to the pasta, simmering for 15 minutes.
- Stir often.
- (You may need to add some more broth, but only enough to keep the meat pasta and vegetables from drying out.
- You do not want the consistency of a soup or a stew.)
- Serve with duck sauce or plum sauce.
- (I use chicken broth for seafood and chicken, and beef broth if using beef as the protein for this dish.)
