Healthy Chicken Fingers
- 1 whole Small Chicken Breast (0.75 - 1 Pound Size)
- 3/4 cups Buffalo Wing Sauce
- 1/2 cups Egg Whites
- 2 Tablespoons Hot Sauce
- 1- 1/2 cup High Fiber Cereal (ex: Nature's Path Organic Heritage Flakes)
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 2 teaspoons Pepper
- 1 Tablespoon Butter, Melted
- 1 Tablespoon Wing Sauce
- 2 teaspoons Hot Sauce
- Preheat oven to 400 F.
- Clean your chicken and cut it into strips.
- In a shallow bowl, combine the wing sauce, egg whites, and hot sauce together.
- Place chicken strips in the wing sauce mixture and set in the refrigerator to marinate for at least 30 minutes.
- In the meantime, combine cereal, garlic powder, onion powder and pepper in the bowl of a mini food processor.
- Pulse until cereal has been reduced to fine crumbs.
- (Its OK if there are some larger pieces).
- Place seasoned cereal crumbs in a shallow dish.
- Once chicken has marinaded, evenly coat each strip in cereal crumbs and place on a greased, foil-lined baking sheet.
- Repeat with the remaining chicken strips.
- Combine butter, wing and hot sauce in a small bowl.
- Before placing chicken in the oven, lightly brush butter mixture over the top of the chicken strips.
- Place chicken in oven and cook for about 20 minutes or until internal temperature is 165 F.
- Serve with an extra side of hot sauce and veggies, and enjoy!
