Homemade Lemon Meringue Pie Recipe

  1. In top of double boiler, mix cornstarch, flour, 1 c. sugar and salt.
  2. Stir in 2 c. boiling water gradually.
  3. In a small bowl, beat egg yolks slightly and then gradually stir them into the cornstarch mix.
  4. Place top of double boiler over boiling water and cook, about 5 min, till filling is thickened, stirring constantly.
  5. Continue to cook for 5 min more, stirring occasionally.
  6. Remove pot from boiling water; fold in butter, lemon peel and juice.
  7. Cover filling and cold slightly.
  8. Heat over to 350 degrees.
  9. Pour filling into pie shell.
  10. Beat egg whites and gradually add in 6 Tbsp.
  11. sugar.
  12. Beat till stiff peaks form.
  13. Spread meringue over lemon filling to edge of crust.
  14. Bake 12-15 min till top is lightly browned.
  15. Cold before serving.
