Mom's Cowboy Chili

  1. Brown ground beef in a very large skillet or sauce pan.
  2. At the same time as you are cooking the beef, prepare the white rice in a small sauce pan or in the microwave according to directions.
  3. Drain the fat from the beef and add the chili powder, red pepper, and black pepper very quickly.
  4. Lower the burner heat to simmer the mixture.
  5. Stir the beef to mix in the spices and make the meat small, not clumped.
  6. Do not do this too long or the meat will burn.
  7. Add the Ranch Style Beans, green chiles, and cooked rice and stir well.
  8. Cover and simmer the mixture for about 15-20 minutes.
  9. Do not simmer for too long or the mixture will dry out.
  10. Heat each tortilla in the microwave for about 15 seconds.
  11. Sprinkle cheese on the tortilla and microwave for another 5-10 seconds.
  12. Add 3-4 spoonfuls of the hot beef mixture to the heated tortilla, fold, and serve with Tabasco.
