Asparagus and Shrimp Salad
- 1 12 lbs asparagus, whole or sliced
- 1 lb cooked shrimp or 1 lb prawns
- 1 thinly sliced lemon, seeds removed
- 14 cup sliced green onion
- 2 tablespoons minced parsley
- 34 cup vinaigrette dressing
- 2 hard-boiled eggs, sliced into wedges
- 2 tomatoes, sliced into wedges
- lettuce leaf
- Cook Aspargus until just tender; drain.
- Combine with shrimp, lemon, onion, and parsley.
- Pour dressing over all; cover and chill.
- To serve, drain and pile on top of lettuce leaves.
- Garnish with egg and tomato wedges.
- Serve.
