Zesty Herb Butter Spread

• 13 cup unsalted butter, softened
• 2 scallions, minced
• 1 elephant garlic clove, peeled and minced
• 1 teaspoon lemon zest
• 1 teaspoon minced fresh rosemary

1. combine all ingredients and mix until well incorporated.
2. Place in a clean container or place on wax paper and roll into a log.
3. Chill until firm.
4. Use on corn, fish, chicken or whatever strikes your fancy!
