Chili the Light Way

  1. In large pot, heat oil and saute onions and peppers until onions start turning translucent.
  2. Add garlic for 2 minutes, Add chicken broth, tomato sauces, liquid smoke, lime juice, chili powder, cumin and oregano.
  3. Stir together and heat to slow boil, bring down to a simmer.
  4. Cook for 1 hour.
  5. Brown meat and add to chili base.
  6. Add drained beans and corn.
  7. Cook for 1 more hour.
  8. Serve with corn bread.
  9. De-lisch.
