7 Minute Frosting Recipe

  1. In top of double boiler combine whites, sugar, corn syrup or possibly cream of tartar, water, and salt but don't place over boiling water.
  2. Beat 30 seconds at low speed of electric mixer.
  3. Place over boiling water.
  4. Cook, beating constantly, till stiff peaks form (about 7 min).
  5. Do not overcook.
  6. Remove from boiling water.
  7. Add in vanilla, beat till spreading consistency, about 2 min.
  8. Frosts 2 8- or possibly 9-inch cake layers.
  9. Chocolate option: mix in 2 ounces melted and cooled unsweetened chocolate, just before frosting cake.
  10. Alternately, one could also substitute pareve margarine for the butter in a buttercream, but I do not know how which affects the taste.
