Broccoli And Rice Casserole
- 1 box frozen chopped broccoli
- 1/3 c. rice
- 1 c. water
- 1/2 tsp. salt (for rice)
- 1/2 tsp. sugar
- 1/2 c. canned diced celery
- 1/2 c. fresh chopped onion
- 1 Tbsp. margarine
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 can cream of mushroom soup
- 1 c. grated Cheddar cheese
- Cook broccoli according to directions on package.
- Drain. Cook rice in water and 1/2 teaspoon salt.
- Combine rice, broccoli, sugar and celery.
- Saute onion in margarine; add to broccoli and rice mixture.
- Stir in 1/4 teaspoon salt, pepper and mushroom soup.
- Add 3/4 cup of grated cheese.
- Pour into baking dish.
- Top with remaining cheese.
- Bake at 350u0b0 for 30 minutes.
- Serves 6.
