White Bean Salad
- 2 (15 ounce) cans white beans
- 2 bell peppers, roasted and chopped
- 3 cups chopped celery (leaves and all)
- 1 head roasted garlic, smashed
- 1 lemon, juice and zest
- 6 slices crispy bacon, chopped (optional)
- 2 tablespoons olive oil
- salt & pepper
- Drain beans.
- Mix together garlic, oil and lemon juice and zest.
- Mix all ingrediants together, salt and pepper to taste.
- Serve room temperature, enjoy!
