Blondie's Step Mom's Pancakes

  1. In a bowl, whisk together milk, egg and vanilla.
  2. In another bowl, sift flour and baking soda.
  3. Stir in sugar.
  4. Make a well in the center.
  5. Add milk mixture.
  6. Whisk until just combined.
  7. Batter will be thick (thin with a little milk, if desired because the batter will get even thicker as it sits).
  8. Heat on large nonstick skillet or griddle over medium heat.
  9. Brush pan with melted butter.
  10. Using about 1/4 cup batter per pancake, cook pancakes 3 to 4 minutes or until bubbles appear on surface.
  11. Turn and cook 3 minutes or until cooked through.
  12. Transfer to a plate.
  13. Cover loosely with foil to keep warm.
  14. Repeat with remaining mixture, brushing pan with butter between batches.
  15. Serve and enjoy!
