The Best Nachos Youll Ever Eat

  1. Preheat oven to 390 degrees F.
  2. Heat oil in a large skillet over medium heat.
  3. Add onion and cook until softened, about 3 minutes.
  4. Add beef and cook until beef is browned, stirring with a wooden spoon.
  5. Drain off any excess fat from the skillet.
  6. Add chili powder, seasoning and tomato paste and cook for 1 minute.
  7. Add tomatoes and water and use a spoon to stir and deglaze pan.
  8. Add the kidney beans.
  9. Reduce heat to medium-low and simmer for 10 minutes, or until thick.
  10. While beef sauce is simmering, place refried beans in a small pot over low heat.
  11. Heat until loosened, about 5 minutes, stirring constantly.
  12. Add Tabasco, chili and cumin and stir to combine.
  13. Empty corn chips into a large deep-sided baking tray.
  14. Dollop refried bean mixture evenly over chips.
  15. Evenly pour beef sauce on top.
  16. Sprinkle on grated cheese and bake in oven for 15 minutes.
  17. Serve with pico de gallo, guacamole and sour cream if desired.
