Lemon Sauce Chicken

  1. In a large fry pan spray cooking spray at med heat.
  2. Add seasoned salt to chicken, place in pan and cook about 10 minutes or until chicken is done.
  3. Remove to oven-proof serving dish.
  4. Add wine vinegar, lemon peel, lemon juice.
  5. Cook 1 minute add salt and pepper.
  6. Pour in chicken stock stirring constantly heat but do not boil.
  7. Pour sauce over chicken.
  8. Sprinkle with parmesan and mushrooms.
  9. Set oven temperature to broil with rack 6 inches from heat.
  10. Broil until lightly browned.
  11. Garnish with lemon and parsley.
