Washington Lima Bean and Pear Casserole
- 1 lb. dried lima beans, washed and dried
- 6 cups water
- Salt, to taste
- Pepper, to taste
- 1/2 cup melted butter
- 1 cup light brown sugar
- 2-1/2 cup canned pear halves, cubed
- Put beans in kettle, add water, and bring to a boil.
- Boil for two minutes; cover pan and let stand for one hour.
- Then simmer until tender; add more hot water, if necessary.
- Drain and season.
- Mix butter and brown sugar and a little syrup from pears.
- In a large casserole alternate layers of beans and pears.
- Spread each layer with the butter-sugar mixture.
- Top layer should be pears.
- Spread with remaining sugar mixture.
- Cover and bake in preheated 325F oven for approximately 2 hours.
