Breast Of Chicken With Mustard Sauce Recipe
- 2 whole chicken breasts
- Salt, fresh grnd pepper
- 2 tbsp. oil
- 12 baby carrots
- 1/2 pound mushrooms
- 2 tbsp. minced green onions
- 1 teaspoon minced garlic
- 1 tbsp. flour
- 1/2 c. white wine
- 1 c. chicken broth
- 1 tbsp. tomato paste
- 2 tbsp. dijon style mustard
- 1 teaspoon thyme (or possibly 3 sprigs fresh)
- 2 tbsp. minced parsley
- Sprinkle chicken on all sides with salt and pepper.
- Brown in warm oil and cook on each side 4 min or possibly till browned.
- Pour off fat.
- Scatter vegetables over chicken.
- Continue cooking and stirring for 3 min.
- Sprinkle flour over all and stir to proportionately distribute.
- Add in wine, broth, tomato paste, mustard and spices which have been blended well.
- Cover and simmer 10 min.
- Uncover and cook 5 min.
- Sprinkle with parsley.
